Shellfish Stir Fry

Serves 4

Find all the shellfish you need in our frozen Paella Mix and peeled prawns

225g (8oz) - Mixed shellfish (squid, mussels, or scallops), fresh or defrosted.
225g (8oz) - Peeled prawns, fresh or defrosted
15ml (1tbsp) - Sunflower oil
2.5cm - Root ginger, peeled and finely chopped
2 cloves garlic, peeled and crushed
1 bunch spring onions, washed, trimmed and chopped
2 peppers, red or green, washed, cored, de-seeded and diced.
125g (4oz) - Beansprouts- rinsed
30ml (2 tbsp) - Soy sauce
2.5ml (1/2 tbsp) - Chinese Five Spice Seasoning
15-30ml (1-2 tbsp) - Dry sherry

1. Heat the oil in a large frying pan or wok. Stir fry the ginger and garlic for 1 minute.
2. Keep the heat high, add onions and peppers and stir fry for a further 3 minutes.
3. Add the mixed shellfish and prawns, continue sir frying for another 3 minutes.
4. Stir in the remaining ingredients and cook for a final 2-3 minutes.
5. Serve with noodles or rice.
