Sweet and Sour Parcels
Frozen fish fillets or portions would also be suitable for this dish. Simply allow a longer cooking time. Different types of fish can be used for each parcel so you can compare taste and texture.
Sweet and Sour Parcels
Serves 2
Ingredients:
- 2 x 175g (6oz) haddock or whiting fillets , fresh or defrosted
- 10ml (2 teaspoons) lemon juice
- Salt and pepper
- 50g (2oz) button mushrooms, wiped and sliced
- 3 Spring onions, washed, trimmers and chopped
- 90ml (6 tablespoons) ready made sweet and sour sauce
Method:
- Cut 2 large squares of foil and lay a fish fillet on each square.
- Place the mushrooms, onions and sauce in a small saucepan and heat gently for 2-3 minutes
- Spoon the sauce and vegetable mixture over the fish fillets, seal the foil to make a parcel.
- Place the parcels in a steamer over a pan of boiling water and cook for 10 minutes.
- Serve with baked potatoes and green vegetables.
Cooking Hint:
Steaming: The heat of the steam cooks the fish and keeps it moist. There is little loss of nutrients.
